If it's Wednesday, it must be Prince Spaghetti Day!




I need some inspiration. Serious inspiration. I need some wonderful recipes that I will enjoy cooking. I'm tired of eating the same old stuff. But, where to start? Trying to find recipes on line just gives me a headache. And how inspiring is the Food Network when all they show is road tripping around the world eating in places I will never get to? Suddenly instead of food I get travel? Huh. I want to eat healthier and more responsibly. Good luck with that. Where are the ideas? The recipes? HELP!!
Interesting vegetarian? Hearty stews? Exotic twists on chicken?
I can't face the grocery aisle one more day without some inspiration.
Ideas?

Three of my favorites:

chicken chili:

medium onion
can of rotel
can of tomato sauce
can of stewed tomatos
can black beans
can red beans
2 chicken breasts
2 cups chicken broth
salt & pepper to taste
cumin

mince onions and saute in soup pot, then add chicken broth (I use extra water and boullion) and boil chicken breasts. remove and cube. Then add the cans, season and simmer together. I serve with tortilla chips and some grated cheese in the bottom of the bowl, and ladle the soup on top. I also use different combinations of beans and or add turkey bacon as well.

irish chicken
broil or grill chicken breasts

in small saucepan, combine:
1 stick of butter
1/2 cup honey
1 bottle of green tobasco sauce (usually about 1 dollar at Walmart)
1 tsp of cinnamon
melt together and spoon on the chicken for the last 3-4 minutes under the broiler. You should have plenty to add on as you eat it too. We like this as a sandwich on ciabatta bread or with oven fries and fresh veggies. We got the recipe from our favorite Irish restaurant in Lansing. Enjoy!

Finally, Healthy Spaghetti Pie

whole wheat pasta
can of spaghetti sauce (i like DelMonte pepper and mushroom)
1 lb bulk turkey sausage
eggs
parmesan cheese

cook your typical amount of spaghetti and drain as usual. Brown the sausage and add the spaghetti sauce to the meat. In a pie plate or a 9x13 pan (depending on how much pasta) spray the pan with cooking spray and add the pasta with 1 or 2 eggs and about 1/2 cup of parmesan cheese. Press into the bottom of the pan and pour the meat sauce over the top. Bake it around 350 for 1/2 hour or so until the egg sets up. Cuts like lasagna, with a lot less work. And the wheat pasta has a nice nutty flavor against the turkey sausage.

I am once again having a baked potato for dinner... bah.

Since I've discovered that Mike can't cook potatoes eating something actually cooked would be good.
